We decided to do our St. Patty’s Day celebrations on Saturday this year…so this morning I surprised our little family with a “Pot of Gold” breakfast.
Isaiah loves practicing his colors, which makes learning about rainbows even more fun. And after the snack we did for sky month, I knew I had to so something rainbow themed for St. Patty’s Day.
I picked three small juice glasses for our fruit parfaits, and used: blackberries, blueberries, kiwi, mango, cantaloupe, and watermelon. For the larger fruits, I made sure to chop smaller pieces to keep the rainbow layers as equal as possible.
Then I topped with fresh cream and golden sprinkles (because everyone knows there’s a pot of gold at the end of every rainbow).
It was an instant hit. The only hiccup was Isaiah seeing the breakfast before Daddy was ready to eat. Lets just say waiting isn’t our strong point right now.
